Cream Cheese Cranberry Bread

This is an awesome recipe that makes 2 loaves at one time so you have one to keep and one to give away.  The tartness of the cranberries and the sweetness of the other ingredients makes for a moist, delicious loaf.

1 cup butter

1 8oz pkg of cream cheese

1-1/2 cup sugar

1-1/2 tsp vanilla

4 eggs

2 cups of flour

1-1/2 tsp baking powder

2 cups of cranberries (fresh or frozen)

1/2 cup chopped pecans (optional)

Preheat oven to 350.

In a large bowl, cream together butter, cream cheese, sugar and vanilla.  Add eggs, one at a time, beating well after each one.

In another bowl, combine flour, baking powder and salt.  Slowly mix into wet batter until combined.  Fold in cranberries and pecans.

Pour into two greased 9×5 loaf pans.  Bake at 350 for 45-60 minutes or 4 mini loaves for 40 minutes. Enjoy!
