Easy, fluffy pancakes…Yes!!!

Okay, I have to admit it, pancakes were not one of my favorite things to make. I had tried over and over but they came out either flat or tasteless. Sooo frustrating. I even tried those recipes that “say” they are easy but to no avail, they were still horrible. But not these little pancakes of heaven, no siree! Thank you to Gesine Bullock-Prado’s for her recipe. Now every weekend when we make our big breakfast I actually look forward to making these (and so does my husband!). Oh and one ingredient I have never tried before was the addition of sour cream. Trust me, these are wonderful. I also add a bit of grated lemon zest and cinnamon. Here you go. Enjoy! 🙂

Ingredients:

1-1/2 cups flour

1 tbsp baking powder

1 tsp salt

1 cup milk

1/2 cup sour cream

1 tbsp vanilla

1 large egg

4 tbsp unsalted butter, melted

Directions:

In a large bowl, whisk together the flour baking powder and salt. In another bowl, combine the milk, sour cream, vanilla and egg. Whisk together until smooth. Slowly pour the melted butter into the milk mixture while you continue to whisk. Make a well in the flour and pour in the wet ingredients. Stir with a wooden spoon until the batter is very smooth. Spray a hot griddle with non-stick spray and drop 1/4 cup of batter on griddle. Wait until you see bubbles start to rise from the batter and peak underneath the pancake to make sure its golden brown. Flip. Continue cooking until second side is golden brown.

  1. You’ve conquered your nemesis, I’m so happy for you! I must say the addition of sour cream intrigues me, I might have to set my old standard recipe aside and give these a whirl.

    1. Yes Kelley, I finally conquered it! What a great feeling. I’ll have to Gesine in person when I meet her. I was hesitant about the sour cream too but you don’t taste it. It just makes the pancake mixture nice and smooth and creamy. Give them a try, you won’t regret it. 🙂
