Oh my goodness, this is one tasty dish! I made this recently for my husband and a friend of mine that was visiting us here in Texas. Linda came all the way from Nova Scotia and had absolutely perfect weather for the entire week she was here. She loved this dish with its curry, cream and veggies. The addition of maple syrup is divine! But don’t take my word for it, okay well yes, you will have to take my word for it until you make it yourself. I’m telling you this is one for the recipe roster!
- 2 boneless, skinless, chicken breasts
- 1 med onion, diced
- 1 green pepper, chopped
- 1 cup carrots, julienned
- 3 cups penne
- 1 Tbsp sugar
- 1-1/4 cup whipping cream
- 1 to 1-1/2 Tbsp Patak’s Mild Curry Paste
- 2-3 Tbsp Maple Syrup
Get your pot of water boiling. Cook penne, set aside. (Try to have it timed so that everything comes together at the same time.) Cook chicken with onions. In separate large frying pan, cook green pepper, carrots on medium heat. Once chicken is cooked, sprinkle sugar on green pepper and carrots, then add to chicken mixture. Add cream, curry paste and maple syrup and mix together until combined. Simmer to let it thicken a bit. Loosen your belt a notch because you’re going to go back for seconds, maybe even thirds!
