Ono-licious Banana Bread

Does that sound Hawaiian? Well, that’s probably because it sort of is. My husband and I went to Hawaii….well, okay, not really. But we did go to a travel show and we walked past a table that was promoting Condominium Rentals in Hawaii. Pretty much the same thing, right? Anyhow, I noticed that they had a free stack of recipe postcards at their booth and took one. This has been my go-to recipe for banana bread ever since. This recipe not only makes two loaves at the same time but it is foolproof. I sometimes add 1/2 cup of chocolate chips or blueberries. It turns out yummy every time. Aloha! 🙂

  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2-1/2 cups flour
  • 2 tsp baking soda
  • 1/2 cup chopped nuts or chocolate chips (optional)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups mashed ripe bananas

Mix together sugar and vegetable oil. Add eggs. Sift dry ingredients together and add to egg mixture. Add bananas, chocolate chips and nuts (if you’re using them). Mix well. Pour into two 8-1/2 x 4-1/2 loaf pans. Bake at 350 for about an hour. Makes 2 loaves and they freeze very well.

    1. Oh he will love it, Kelley! Did you know you can slice banana bread and toast it in the toaster? I never heard of that before until my friend Linda mentioned it to me. I will be making this recipe this morning so I’ll have to try the toaster part. I’ll let you know. Thanks for commenting! 🙂
