What’s the beef with this stir-fry? Just sirloin strips.

I noticed a funny meme on Pinterest tonight. It showed a cow with the caption, “My grandfather was a knight. His name was Sir Loin.” After just having the beef and broccoli stir-fry tonight for supper I thought it was quite timely. This is a lickety-split fast supper to pull together in a hurry. Team it up with some basmati rice and make room for seconds.

  • 1 Tbsp low-sodium soy sauce
  • 1 tsp cornstarch
  • 1 Tbsp sherry (or alcohol-free sherry)
  • 2 Tbsp oyster sauce
  • 1/4 tsp pepper
  • 1 tsp cooking oil
  • 3 cups sliced broccoli (florets and peeled stems)
  • 1 Tbsp cooking oil
  • 3/4 lb. sirloin steak, sliced into 1/8 inch thin strips

Stir soy sauce into cornstarch in small cup. Add next 4 ingredients. Stir. Set aside.

Heat wok or frying pan on medium-high. Add first amount of cooking oil. Add broccoli. Stir-fry for 4 minutes until tender-crisp. Transfer to bowl.

Add second amount of cooking oil to hot wok. Add beef strips. Stir-fry until desired doneness. Add broccoli. Stir cornstarch mixture. Stir into beef mixture until boiling and thickened. Makes 3-1/2 cups. Serves 4.
