Pumpkin Bars

As I typed the title of this recipe I had a vision of a bunch of pumpkins all sitting around a bar ordering drinks…all with pumpkin spice in them of course! Okay, so this recipe isn’t anything related to bars of that sort. These pumpkin bars are delicious! Now I know I say that about all of my recipes but with the cream cheese frosting on top these little squares are undeniably delicious!

After frosting the bars I had to order myself to stop dipping my finger in the empty bowl. “Just one more swipe of the frosting and that will be it.” Nope. It wasn’t. “You’re gonna make yourself sick.” Didn’t care. So after maybe five or six more swirls on the tip of my finger I called it a night and okay, no I didn’t…I had one last swirl. The moral of this story? Don’t leave me around an “almost” empty bowl of cream cheese frosting.

And now the moment you’ve all been waiting for! The recipe!!

  • 2 cups of flour
  • 1-1/2 cups sugar
  • 2 tsps baking powder
  • 2 tsps ground cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cloves
  • 4 eggs, beaten
  • 1 15oz. can pumpkin (I used organic)
  • 1 cup cooking oil (I used avocado oil)

Preheat oven to 350. In a large bowl, stir together the first 7 ingredients. Stir in the eggs, pumpkin and oil until combined. Spread batter into an ungreased 15x10x1 inch baking pan. (I used those clear pyrex ones).

Bake for 25 to 30 minutes until toothpick in center comes out clean. Let stand in pan on a wire rack for 2 hours. Spread with cream cheese frosting. Cut into bars. These freeze well.
