Chunky Pumpky Bread

Okay so I named it myself, can you tell? It’s actually supposed to be called Chunky Apple Pumpkin Bread. I made it for the first time today and already it has received rave reviews! Every slice is chock-full of spices and nuts of your choosing…in this case, that would be walnuts.

  • 1-2/3 cup flour
  • 1-1/2 cup sugar
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp baking powder
  • 1/4 tsp ground cloves
  • 1 cup canned pumpkin (I use organic)
  • 1/2 cup water
  • 2 large eggs, room temperature
  • 1/3 cup canola oil (I used avocado oil)
  • 1 cup chopped, peeled tart apples
  • 3/4 cup chopped walnuts

In a large bowl, combine flour, sugar, baking soda, salt, cinnamon, nutmeg, baking powder and cloves. In another large bowl, whisk the pumpkin, water, eggs and oil. Stir into dry ingredients just until moistened. Fold in apples and walnuts.

Pour into greased (I use Baker’s Joy Spray) 9×5 loaf pan. Bake at 325 for about 1-1/2 to 1-3/4 hours or until a toothpick comes out clean. [Mine was done about five minutes shy of 90 minutes] . Cool for 10 minutes before removing from pan to a wire rack to cool.
