A Canadian friend of mine gave me this recipe the other day. Turnips are huge up in Canada so they are a common side dish on dinner plates and I miss eating them on a regular basis. My husband says he doesn’t like turnip so I may just surprise him with this recipe one night because it sounds delicious. I’ll let you know how it turns out.
- 6 cups of cubed turnip
- 2 Tbsp butter
- 2 eggs, beaten
- 3 Tbsp flour
- 1 Tbsp brown sugar
- salt & pepper to taste
- pinch of nutmeg
Boil turnip until fork tender. Drain water and mash with potato masher. Wait for it to cool down a bit. Add butter, eggs, etc and then top with a mixture of 1/2 cup of fine breadcrumbs and 2 Tbsp of melted butter for the topping.
Bake at 375 for 25 minutes until topping turns light brown.
