Wild Blueberry Coffee Cake

Wowee! After just two weeks of living in the marvelous State of Maine, I’m already baking with those wonderful wild blueberries that are in stores now. Yum! I love them and you will love this coffee cake, trust me. This comes together quickly and will have your home smelling like cinnamon, sugar and of course blueberries. So, what are you waiting for? This recipe serves 12, or in my household it serves 4, because we each had three pieces shortly after it came out of the oven.

  • 2 cups flour
  • 1-1/2 cups sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/3 cup butter
  • 2 eggs
  • 1 cup milk
  • 2 cups wild blueberries
  • 1/2 cup sugar
  • 1 tsp cinnamon

Preheat oven to 350

Mix flour, sugar, baking powder and salt. Cut in butter. Add eggs and milk and beat until smooth.

Pour into greased 13×9 inch pan. Top with blueberries. Combine the 1/2 cup sugar and cinnamon and sprinkle over blueberries.

Bake 35 to 40 minutes.

Cool pan on a wire rack for 20 minutes.

Serves 12 ( ha ha)
