Homemade Crab Cakes

Living in Maine sure has its advantages, and one of them is an abundance of fresh, local seafood. I picked up some fresh crab meat yesterday and made the crab cakes tonight for my husband, as it is one of his favorites. I had some mashed turnip and rice to go along with them. It all made for a fast, easy and very tasty meal. Let’s get started!

They taste way better than they look! ha ha

2 slices of bread, with the crusts cut off

2 Tbsp mayonnaise

2 tsp of OLD BAY seasoning OR Cajun Seasoning

2 tsp of parsley flakes (oops, I forgot to put these in tonight – still tasted great!)

1/2 tsp prepared mustard

1 egg, beaten

1 lb crab meat

Bread bread into tiny pieces, mix in mayo, seasoning, parsley, mustard and egg. Stir in the crabmeat and shape into patties. Put one Tbsp of vegetable oil in frying pan and bring heat to medium-high. Fry on each side for about 5 minutes until it forms a nice crisp crust.
