If you’re looking for a fast, easy and delicious meatloaf recipe, this is the one! I’ve been using it for years and was surprised that I didn’t upload it already. Mix everything in one big bowl and then scrape into a loaf pan. Within an hour you’re looking at some hot, comfort food on your plate.
Lets’ go!

Ingredients:
- 2 eggs, slightly beaten
- 3/4 cup ketchup
- 1/2 cup milk or water (I always use milk)
- 1-1/2 cups of dry bread crumbs (I usually just cut up a couple of pieces of bread)
- 1 envelope of dry onion soup mix
- 2 lbs ground beef
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup more of ketchup for the topping.
Mix the first 8 ingredients together in a bowl. Pack it into a loaf pan. Smooth ketchup over the top.
Bake uncovered at 350 degrees for an hour and a quarter.
Serves 6-8
For cheesy meatloaf, add one cup of grated medium cheese in center.
PS: Makes a great sandwich the next day!
