“No Peeking” Chicken & Rice Casserole

So fast and easy and so delicious! In just one hour, with a few minutes of prep work you’ll have a steaming chicken and rice casserole which is great with a side veggie. This casserole reminded me of one that my Mom used to make for us years ago. If you have chicken breasts in the fridge and you’re looking for a no-fuss, no-muss but very tasty meal, give this one a try. You’ll be glad you did!

  • 2 cups of Instant Rice
  • 1 can of cream of chicken
  • 1 can of cream of celery
  • 1 can of water or chicken broth (I used chicken broth)
  • 2-4 chicken breasts (can use chicken tenderloins as well)
  • 1 package of onion soup mix
  • chicken spices (I just used what I had in my cupboard)

Spray the bottom of a 9×13 glass baking pan. Add the two cans of soup and one can of water or broth. Then add your two cups of instant rice and stir it all around inside the pan. Next, cut up your chicken breasts and add them to the top of the mixture. Sprinkle each piece with chicken spice of your choosing. Then sprinkle the contents of the onion soup mix on each piece of chicken. Cover tightly with tinfoil and bake in the oven for one hour at 375 degrees. DO NOT PEEK! Serve with veggies on the side.
