Lemon Delight Squares

Okay, stop the presses and hold the phone! These delicious lemon squares with a Nilla wafer crust are my absolute favorite. They have the consistency of a cheesecake but not as rich, which means you can eat more than one and not feel any guilt whatsoever. That’s my rationale and so far it’s been working for me. ha ha

  • 20 Nilla Wafers, finely crushed
  • 1/2 cup flour
  • 1/4 brown sugar, packed (I used light brown sugar)
  • 1/4 butter, cold (I used Irish Butter, salted)
  • 8 oz Philadelphia Cream Cheese, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 Tbsp flour
  • 3 Tbsp lemon zest, divided
  • 1/4 cup fresh lemon juice
  • 1/4 tsp baking powder
  • 2 tsp powdered sugar for topping

Preheat oven to 350 degrees.

Line an 8×8 pan with foil (I used a glass pan)

Mix first 3 ingredients in medium bowl.

Cut in butter until mixture resembles coarse crumbs. Press the mixture onto the bottom of the prepared pan and bake for 15 minutes. While the crust is baking, beat cream cheese and sugar with mixer until well blended. Add eggs one at a time and 2 Tbsp. flour. Mix well.

Blend in 1 Tbsp of lemon zest, the 1/4 cup of lemon juice and baking powder. Once this is blended, pour over crust. (Note that the crust does not have to be cooled first).

Bake for 25 to 28 minutes or until the center is set. Let cool completely and then refrigerate for 2 hours.

Sprinkle with powdered sugar and reserved 2 Tbsp of lemon zest before serving.
