Asparagus Stuffed Chicken Breasts


I’ll admit it, I was never a huge fan of asparagus but in my more “mature” years I’ve certainly come a long way. I look forward to trying new things and tasting foods I used to say no to before even giving them a chance. Poor asparagus was one of them…until now. This is a great way to have asparagus with all the tasty spices and juices from the chicken. The chicken breasts start off being seared in a skillet and then finished in the oven. The addition of mozzarella slices on top just adds to the already wonderful flavor of this dish.

  • 4 boneless, skinless chicken breasts
  • salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 bunch of asparagus, ends trimmed
  • 4 slices of mozzarella cheese
  • 1 Tbsp(or more) of olive oil
  • 1 Tbsp Italian Seasoning
  • Fresh parsley, chopped for garnish


Preheat oven to 375 degrees.

Season chicken with salt, pepper, garlic powder, and paprika. Using a sharp knife, cut a pocket into the side of each chicken breast. Stuff each chicken breast with 4-5 asparagus spears. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side, until golden brown. Sprinkle Italian Seasoning over the chicken breasts and add one slice of mozzarella to each chicken breast. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through. Garnish with chopped parsley before serving.

I secured the chicken breasts with toothpicks – just be sure to remove before serving.

    1. Hi Faye, yes, I was pleasantly surprised at how yummy it was. I told Jeff it was “restaurant-worthy” (even if I do say so myself.) ha ha. Jeff really liked it too!
